normally i update some packages by hand, like php, mysql, mailscanner
so i think i miss a lot of updates

so when i do yum update, i get this list
is it safe to upgrade all the listed rpms?

wow, thats a lot of really old exploitable stuff. Of course its all safe to update. You shouldnt wait to do that in the future, you're running a system thats vulnerable to all sorts of attacks at the moment.
